For the cake:
  • 2.5 cup all-purpose flour
  • 2.5 tsp baking powder
  • 0.5 tsp salt
  • 1 lb unsalted butter, softened
  • 2 cup granulated sugar
  • 4 large eggs
  • 1 cup whole milk
  • 1 tbsp vanilla extract
For the frosting:
  • 1.5 lb unsalted butter, softened
  • 5 cup powdered sugar
  • 3 tbsp heavy cream
  • 1 Green and moss gel food coloring
  • 1 Gold leaf and edible star sprinkles, for decorating

Method
 

Bake the cake layers
  1. Preheat the oven to 350F and grease and flour three 8-inch round cake pans.
  2. Whisk the all-purpose flour, baking powder, and salt together in a bowl and set aside.
  3. Cream the unsalted butter, softened, and granulated sugar together until light and fluffy, then beat in the large eggs one at a time.
  4. Alternate adding the all-purpose flour mixture and whole milk into the batter, mixing until just combined, then stir in the vanilla extract.
  5. Divide the batter among the prepared pans and bake for 24 to 28 minutes, until a toothpick comes out clean.
  6. Cool the layers completely before frosting so the buttercream stays smooth.
Make and frost the buttercream
  1. Beat the unsalted butter, softened, until creamy, then beat in the powdered sugar and heavy cream until smooth.
  2. Tint the frosting with Green and moss gel food coloring until you reach an earthy moss-green color.
  3. Stack the cake layers and frost them with the green buttercream, smoothing the outside for clean lines.
  4. Finish the top and edges with Gold leaf and edible star sprinkles for decorating.

Notes

Pro tip: cool the cake layers completely before frosting—warm layers melt buttercream and blur the clean edges. Store covered in the refrigerator up to 3 days; bring to room temperature for 20–30 minutes before serving. Freezing is yes: wrap unfrosted layers airtight and freeze up to 2 months.
