Add second layer and season
- Repeat with a second layer of hash browns, then add the remaining scrambled eggs, sausage, and cheeses so the bake has two distinct strata.
- Whisk milk with salt and pepper and pour evenly over the top, ensuring the liquid reaches the edges for consistent setting.
Bake and serve
- Bake at 375°F for 35-40 minutes until golden and set, and look for bubbling cheese and firm layers when you gently check the center.
- Top with sliced green onions before serving for a fresh finish and a pop of color across the top slice.
Notes
For the best texture, squeeze excess moisture from thawed hash browns before layering so the casserole doesn’t turn watery. Refrigerate leftovers in a covered container for up to 3 days; reheat individual portions in the microwave. Freezing is not recommended due to hash brown texture changes, but you can prep the layers (without baking) and bake within 24 hours. For a lighter option, use reduced-fat cheddar and mozzarella while keeping the bake time the same.
