Ingredients

Peaches
  • 5 peaches Use 4 to 6 ripe peaches, sliced.
  • 1 tbsp lemon juice Used to macerate the peaches.
Mousse
  • 1 cup heavy cream Cold for whipping.
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup peach yogurt
Trifle layers
  • 4 cup vanilla cake Cubed vanilla cake (about 4 cups).
  • Fresh mint For garnish.

Equipment

  • 1 stand mixer

Method

Macerate peaches
  1. Toss the sliced peaches with lemon juice and let sit for 15 minutes to release their juices, until you see a light syrup forming around the fruit.
Make whipped mousse
  1. Whip the heavy cream, powdered sugar, and vanilla extract in a cold bowl until stiff, glossy peaks form.
Combine with peach yogurt
  1. Fold the whipped cream together with the peach yogurt to make a mousse, stopping as soon as no streaks remain.
Layer the trifle
  1. Layer cake cubes, macerated peaches with their juices, and the peach mousse in a glass trifle bowl, aiming for even thickness across the bottom layer.
Build remaining layers
  1. Repeat the layers until the bowl is full, ending with a layer of mousse and leaving the top smooth.
Chill and garnish
  1. Cover and refrigerate for at least 2 hours until set, then garnish with fresh peach slices and mint before serving.

Notes

Pro tip: macerate the peaches only until syrup pools, then layer promptly so the cake stays soft rather than soggy. Refrigerate leftovers in a covered container up to 3 days; freezing is not recommended due to mousse texture. For a lighter swap, use low-fat peach yogurt while keeping the whipped cream step for the best stable mousse.
