Prep the cake and strawberries
- Slice the angel food cake into thick rounds or tear it into chunks. Keep pieces large so they stay pillowy through layering.
- In a bowl, combine the sliced strawberries, sugar, and balsamic vinegar, then stir to coat. Refrigerate for 30 minutes until deeply syrupy (you should see juices forming a ruby syrup).
Make diplomat cream
- Heat the milk in a Dutch oven over medium heat until steaming but not boiling. Stir frequently so it heats evenly.
- In a bowl, whisk egg yolks with sugar and flour until smooth. The mixture should look pale and slightly thickened.
- Slowly whisk the hot milk into the egg yolk mixture. Pour in gradually to prevent scrambling.
- Return everything to the Dutch oven and cook over medium heat, stirring constantly, until thickened (about 5 to 8 minutes). You should be able to draw a line through the custard with a spoon and it holds briefly.
- Stir in the vanilla and transfer the pastry cream to a container. Cool completely before folding so the whipped cream does not melt.
- Whip the heavy cream until stiff peaks form. The cream should stand straight when the whisk is lifted.
- Fold the cooled pastry cream into the whipped cream to make diplomat cream. Mix gently until the color is uniform and the texture stays airy.
Assemble the trifle
- Add a layer of angel food cake to a clear trifle bowl. Arrange so the base is evenly covered.
- Spoon on a layer of diplomat cream, then add macerated strawberries. Spread the cream in swoops for visible layers.
- Repeat the layering with angel food cake, diplomat cream, and macerated strawberries. Press lightly so layers settle without crushing the cake.
- Top with a final cream layer, then mound the strawberries. Finish with fresh mint for a bright, fresh cue.
- Serve immediately or refrigerate the assembled shortcake for up to 1 hour. Keep it chilled for the best texture and clean slice/serve.
Notes
Pro tip: fully cool the pastry cream before folding into whipped cream so the diplomat cream stays structured and pipeable. Store covered in the refrigerator up to 1 hour for best texture; freezing is not recommended. For a lighter option, use half-and-half in place of some of the milk for the pastry cream, but expect a slightly softer set.
