Cook and prep
- Bring a pot of water to a boil and cook the ramen noodles for 2 to 3 minutes, then drain, reserving some noodle water.
- Whisk the peanut butter, chili garlic sauce, soy sauce, and brown sugar together in a large bowl until smooth.
- Thin the sauce with the warm noodle water until glossy and pourable.
Toss and finish
- Add the drained noodles to the sauce and toss to coat completely.
- Top with sliced green onions and crushed peanuts before serving.
- Serve immediately while hot.
Notes
For the boldest peanut flavor, use natural peanut butter. Store leftovers in a sealed container in the refrigerator up to 2 days; reheat in a skillet with a splash of water to loosen the sauce. Freezing isn’t recommended because the peanut sauce can separate after thawing. If you want a dairy-free option, this recipe is naturally dairy-free; for gluten-free, use tamari instead of soy sauce and gluten-free ramen noodles.
