Ingredients
  

Ramen noodles
  • 2 packs ramen noodles Discard seasoning packets.
Peanut sauce base
  • 0.33333333333333 cup creamy peanut butter Natural peanut butter gives stronger peanut flavor.
  • 2 tbsp chili garlic sauce
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 2 tbsp warm noodle water Use reserved water from cooking the noodles.
Toppings
  • 2 green onions Slice for garnish.
  • crushed peanuts Use for garnish.

Method
 

Cook and prep
  1. Bring a pot of water to a boil and cook the ramen noodles for 2 to 3 minutes, then drain, reserving some noodle water.
  2. Whisk the peanut butter, chili garlic sauce, soy sauce, and brown sugar together in a large bowl until smooth.
  3. Thin the sauce with the warm noodle water until glossy and pourable.
Toss and finish
  1. Add the drained noodles to the sauce and toss to coat completely.
  2. Top with sliced green onions and crushed peanuts before serving.
  3. Serve immediately while hot.

Notes

For the boldest peanut flavor, use natural peanut butter. Store leftovers in a sealed container in the refrigerator up to 2 days; reheat in a skillet with a splash of water to loosen the sauce. Freezing isn’t recommended because the peanut sauce can separate after thawing. If you want a dairy-free option, this recipe is naturally dairy-free; for gluten-free, use tamari instead of soy sauce and gluten-free ramen noodles.
