Prep chickpeas

Make the harissa glaze
- In a small bowl, whisk harissa paste, honey, and minced garlic until smooth and thick.
Coat and serve
- Toss the hot roasted chickpeas in the harissa glaze until fully coated and glossy.
- Garnish with fresh parsley and serve warm.
Notes
For the crispiest texture, make sure the chickpeas are fully dry before oiling and roasting; any moisture will soften them. Refrigerate leftovers in a sealed container for up to 3 days, and rewarm in a 400°F oven or air fryer until hot and lightly crisp again. Freezing is not recommended because the glazed coating can lose its crisp bite. For a halal-friendly option, ensure your harissa paste is labeled free of alcohol-based ingredients if needed.
