Method
 

Crisp the bacon
  1. Cook the chopped bacon in a large cast iron skillet over medium heat until crisp, 6-8 minutes, then remove and set aside while leaving the drippings in the pan.
  2. Keep the bacon drippings in the skillet so the chicken can sear in the rendered fat.
Sear and finish the chicken
  1. Season the chicken breasts with salt and pepper, then sear in the bacon drippings over medium heat for 5-6 minutes per side until golden and cooked through.
  2. Remove the chicken breasts and set aside while you cook the mushrooms and sauce.
Build the mushroom-garlic base
  1. Add the sliced mushrooms to the same skillet and cook until golden, about 5 minutes.
  2. Stir in the minced garlic and cook for 30 seconds until fragrant.
Wilt spinach and make it creamy
  1. Add the baby spinach and cook just until wilted, then stir in the heavy cream and grated Parmesan cheese.
  2. Simmer for 3-4 minutes until the sauce thickens slightly.
Smother and serve
