beef stew meat, cubed
  • 2 lb beef stew meat, cubed
baby potatoes, halved
  • 1.5 lb baby potatoes, halved
butter, melted
  • 4 tbsp butter, melted
garlic, minced
  • 4 cloves garlic, minced
beef broth
  • 1 cup beef broth
Worcestershire sauce
  • 1 tbsp Worcestershire sauce
dried thyme
  • 1 tsp dried thyme
Salt and pepper, to taste

chopped fresh parsley
  • 2 tbsp chopped fresh parsley

Method
 

Load the slow cooker
  1. Place the beef and potatoes in the slow cooker. Arrange them in an even layer so the sauce coats everything.
Make the garlic butter sauce
  1. Whisk together the melted butter, garlic, beef broth, Worcestershire sauce, thyme, salt, and pepper. Stir until fully combined and glossy.
  2. Pour the mixture over the beef and potatoes, tossing to coat. Make sure most of the sauce pools around and between the chunks and potatoes.
Slow cook until fork-tender
  1. Cover and cook on low for 7-8 hours, or high for 4 hours, until the beef is fork-tender. Check visually near the end: the sauce should look thicker and the potatoes should be soft when pressed with a fork.
Finish and serve
  1. Stir before serving to redistribute the garlic butter sauce. Garnish with chopped fresh parsley for a fresh green finish.

Notes

For the most even tenderness, cut the potatoes into sizes close to the beef cubes. Refrigerate leftovers in a sealed container up to 4 days; reheat in the microwave or on the stovetop with a splash of broth to loosen the sauce. Freezing is not recommended because potatoes can soften and mealy-texture after thawing. Dietary swap: use low-sodium beef broth and season with less added salt to keep flavor while reducing sodium.
