Make the cookie batter

Bake the wafers
- Spread the batter into thin ovals on a lined sheet pan using an offset spatula so they bake evenly.

- Cool completely so the wafers firm up and don’t crack when you add the chocolate.
Assemble and set
- Spread melted white chocolate on one cookie in a thin, even layer, then top with a second cookie.
- Let the sandwich cookies rest until the chocolate sets, leaving a glossy center when sliced or bitten.
Notes
Pro tip: spread the batter very thin with an offset spatula for the signature delicate, crisp langue de chat texture. Store in an airtight container in the fridge for up to 5 days; bring to room temperature before serving. Freezing isn’t recommended because the wafers can lose their delicate texture after thawing. For a gluten-free swap, use a 1:1 gluten-free all-purpose flour blend (the texture may be slightly less crisp).
