Method
Melt the candy coating
- Melt each color of candy melts separately in microwave-safe bowls in 20-second bursts, stirring between each until smooth and fluid with no lumps.
- Keep the melted candy melts warm between colors by reheating in additional 20-second bursts only as needed.
Dip and sprinkle
- Dip the rim of each waffle cup into the melted candy coating, turning to coat evenly around the rim.
- Immediately roll the coated rim in rainbow sprinkles before the coating sets so the sprinkles adhere.
Set and serve
- Place the dipped cups upright on a parchment-lined tray so the coating stays on the rim.
- Let the coating harden completely at room temperature for about 15 minutes.
- Fill the cups with scoops of ice cream just before serving for best crunch and texture.
Notes
Pro tip: work with one color of candy melts at a time to keep colors distinct, and add sprinkles right after dipping while the coating is still wet. Store prepped dipped cups at room temperature for up to 1 day before filling. Freezing is not recommended because the sprinkle coating can soften. Dietary swap: use dairy-free candy melts if you want a dairy-free version while keeping the same dipping method.
