Dry coating
  • 2 cup powdered sugar
Cereal base
  • 9 cup rice cereal squares
Chocolate pumpkin coating
  • 2 cup white chocolate chips
  • 0.25 cup pumpkin puree
  • 1 tsp pumpkin pie spice
  • 1 tsp vanilla extract

Method
 

Melt the chocolate
  1. Melt the white chocolate chips in the microwave using 30-second bursts, stirring between each burst until smooth and pourable.
  2. Stir in the pumpkin puree, pumpkin pie spice, and vanilla extract until the mixture looks evenly combined and glossy.
Coat the cereal
  1. Pour the chocolate mixture over the rice cereal squares in a large bowl and toss gently until the cereal is evenly coated.
Dust with powdered sugar
  1. Transfer the coated cereal to a large bag and add the powdered sugar.
  2. Shake the bag until every piece is fully coated in powdered sugar, with no dry sugar patches.
Set and serve
  1. Spread the puppy chow on a sheet pan in a single layer and let it set for 10 minutes before serving.

Notes

Pro tip: toss the cereal gently with a spatula before adding powdered sugar to avoid crushing the pieces. Store in an airtight container at room temperature for up to 3 days; it can also be refrigerated for up to 5 days (texture will firm slightly). Freezing is not recommended because the powdered sugar can weep after thawing. For a dairy-free swap, use dairy-free white chocolate chips and follow the same melting method.
