Melt the chocolate
- Melt the white chocolate chips in the microwave using 30-second bursts, stirring between each burst until smooth and pourable.
- Stir in the pumpkin puree, pumpkin pie spice, and vanilla extract until the mixture looks evenly combined and glossy.
Coat the cereal
- Pour the chocolate mixture over the rice cereal squares in a large bowl and toss gently until the cereal is evenly coated.
Dust with powdered sugar
- Transfer the coated cereal to a large bag and add the powdered sugar.
- Shake the bag until every piece is fully coated in powdered sugar, with no dry sugar patches.
Set and serve
- Spread the puppy chow on a sheet pan in a single layer and let it set for 10 minutes before serving.
Notes
Pro tip: toss the cereal gently with a spatula before adding powdered sugar to avoid crushing the pieces. Store in an airtight container at room temperature for up to 3 days; it can also be refrigerated for up to 5 days (texture will firm slightly). Freezing is not recommended because the powdered sugar can weep after thawing. For a dairy-free swap, use dairy-free white chocolate chips and follow the same melting method.
