Bake the pumpkin cake
- Heat oven to 350°F and prepare the spice cake mix according to package directions, mixing in the pumpkin puree before baking.
- Bake in a 9x13 pan as directed on the box, until a toothpick comes out with moist crumbs; then cool for 10 minutes.
Soak and chill
- Poke holes all over the warm cake using the handle of a wooden spoon so the soaking liquids can seep down.
- Pour the sweetened condensed milk over the cake and then pour half the caramel sauce, letting both flow into the holes.
- Chill the cake for at least 2 hours until set.
Top and serve
- Spread the whipped topping evenly over the chilled cake so it covers the surface to the edges.
- Drizzle with the remaining caramel sauce and scatter toffee bits over top before serving.
Notes
Pro tip: poke the holes while the cake is still warm so the condensed milk soaks in fully rather than pooling on top. Store covered in the refrigerator up to 4 days; freeze is not recommended because the whipped topping texture can change after thawing. For a lighter option, use low-fat whipped topping if you want to reduce overall richness while keeping the soak-and-top method.
