Peanut Butter Oatmeal Energy Balls

Peanut butter oatmeal energy balls are no-bake, chewy bites made by stirring oats, peanut butter, honey, vanilla, and salt into a thick, sticky mixture, then chilling to firm. Mini chocolate chips are folded in for small melty bursts, finished with a simple roll-and-chill method for easy grab-and-go snacks.

Ingredients

Rolled oats
  • 1.5 cup rolled oats
Peanut butter
  • 0.5 cup peanut butter
Honey
  • 0.33 cup honey
Mini chocolate chips
  • 0.25 cup mini chocolate chips
Vanilla extract
  • 1 tsp vanilla extract
Salt
  • 0.25 tsp salt

Method

Mix the energy ball base
  1. In a large bowl, combine the rolled oats, peanut butter, honey, vanilla extract, and salt.
  2. Stir until a thick, sticky mixture forms and all ingredients are evenly combined.
  3. Fold in the mini chocolate chips so they distribute throughout the mixture.
Chill and shape
  1. Chill the mixture in the fridge for 15-20 minutes to firm up slightly for easier rolling.
  2. Roll the mixture into small bite-sized balls using your hands.
  3. Place the rolled balls on a parchment-lined tray.
  4. Store the rolled balls in the refrigerator for at least 30 minutes before serving to firm up fully.

Notes

Pro tip: Chill the mixture briefly before rolling for less stickiness, and wet your hands slightly while shaping to keep the texture from clinging. Store in an airtight container in the refrigerator for up to 1 week; freeze for longer storage. For a dietary swap, use maple syrup in place of honey for a different flavor while keeping the same chewy, no-bake method.
