Ingredients
  

Dry base
  • 1.5 cup rolled oats
  • 0.5 cup vanilla protein powder
Binding and flavor
  • 1 cup creamy peanut butter
  • 0.33 cup honey
  • 1 tsp vanilla extract
Chocolate
  • 0.5 cup mini chocolate chips

Method
 

Mix the dough
  1. Combine the rolled oats, creamy peanut butter, honey, vanilla protein powder, and vanilla extract in a large bowl and stir until fully combined, until no dry powder remains.
  2. If the mixture seems too dry, add water 1 tsp at a time, mixing after each addition, until it holds together when pressed.
  3. Fold in the mini chocolate chips until evenly distributed throughout the dough.
Portion and chill
  1. Use a small cookie scoop to portion the dough and roll into balls with your hands so they are uniform in size.
  2. Place the balls on a plate or baking sheet in a single layer so they chill without sticking to each other.
  3. Chill in the refrigerator until firm, about 1 to 2 hours, before serving so the texture sets and holds shape.

Notes

For best texture, chill until the centers feel firm, then store in an airtight container in the fridge for up to 1 week. To freeze, arrange balls in a single layer to freeze until solid, then transfer to a freezer bag for up to 3 months. Dietary swap: use a chocolate protein powder and/or dairy-free chocolate chips if you need a dairy-free option (check labels for milk ingredients).
