Prep and preheat
- Preheat oven to 375°F and set a sheet pan ready for baking.
Mix the meatloaf
- Combine ground beef, breadcrumbs, eggs, milk, garlic, dried oregano, salt, and pepper until evenly mixed.
- Press half the beef mixture into a loaf pan to form an even layer.
Add the mozzarella center
- Layer shredded mozzarella in the center of the loaf and leave a small border around the edges.
- Top with the remaining beef mixture and seal the edges well so the cheese stays inside.
Wrap and bake
- Weave bacon over the top in an even lattice so the surface is covered.
- Bake at 375°F for 55–60 minutes until the bacon is crisp and the internal temperature reaches 160°F (visual cue: bacon browned and crisp).
Rest and slice
- Rest the meatloaf for 10 minutes before slicing to let the cheese set slightly (visual cue: slices hold their shape better).
Notes
Seal the edges tightly where the beef meets so the mozzarella doesn’t leak out while baking. Refrigerate leftovers in an airtight container up to 3 days; reheat slices in a 325°F oven until warmed through. Freezing: yes—freeze cooled slices for up to 2 months and thaw overnight in the fridge before reheating. For a lighter option, swap half the ground beef for leaner ground turkey while keeping the same seasoning and bake time.
