Ingredients

Chicken and creamy base
  • 3 cup cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp garlic powder
Buttery cracker topping
  • 1 sleeve buttery crackers, crushed
  • 4 tbsp butter, melted

Equipment

  • 1 sheet pan

Method

Mix the filling
  1. Combine cooked shredded chicken, softened cream cheese, sour cream, shredded cheddar, shredded mozzarella, and garlic powder in one mixture until evenly blended and creamy.
Bake the casserole
  1. Spread the mixture evenly into a greased baking dish.
  2. Toss crushed buttery crackers with melted butter until the crumbs look evenly coated.
  3. Sprinkle the buttery cracker crumbs evenly over the top of the casserole.
  4. Bake at 350°F for 30-35 minutes, until the center is bubbly and the top is golden and crispy.
  5. Rest the casserole for 5 minutes after baking so it sets before serving.

Notes

Pro tip: soften the cream cheese fully before mixing for a smooth, even filling. Refrigerate leftovers in a covered container for up to 3 days; reheat in the oven or microwave until hot. Freezing is not recommended due to texture changes in the cracker topping. For a lighter option, use reduced-fat cream cheese and sour cream to cut calories while keeping the same creamy bake.
