Cook and melt the cheese sauce

- In a small saucepan, heat the milk and butter over medium-low until warm, about 3-4 minutes, with gentle steam and glossy butter.
- Add the cooked macaroni and shredded sharp cheddar to the warm milk mixture and stir until the cheese is fully melted.
- Stir continuously until the sauce is smooth and glossy, about 1-2 minutes, with no visible cheese clumps.
- Season with salt and pepper to taste, stirring until evenly combined and the sauce looks consistent.
Pack hot in a thermos
- Preheat a thermos with boiling water for 1 minute, then drain completely.
- Fill the thermos with the hot mac and cheese, wipe the rim, and seal immediately for lunch.
Notes
Pro tip: shred the cheddar fresh (or buy pre-shredded labeled for melting) so the sauce turns glossy instead of grainy. Store any leftovers in the refrigerator up to 2 days; reheat gently on the stovetop with a splash of milk. Freezing isn’t recommended because cheddar sauce can break when thawed. For a gluten-free swap, use gluten-free elbow macaroni and follow its cook time.
