Method
 

Cook and melt the cheese sauce
  1. Cook the elbow macaroni according to package directions until tender, then drain and return to the pot off the heat.
  2. In a small saucepan, heat the milk and butter over medium-low until warm, about 3-4 minutes, with gentle steam and glossy butter.
  3. Add the cooked macaroni and shredded sharp cheddar to the warm milk mixture and stir until the cheese is fully melted.
  4. Stir continuously until the sauce is smooth and glossy, about 1-2 minutes, with no visible cheese clumps.
  5. Season with salt and pepper to taste, stirring until evenly combined and the sauce looks consistent.
Pack hot in a thermos
  1. Preheat a thermos with boiling water for 1 minute, then drain completely.
  2. Fill the thermos with the hot mac and cheese, wipe the rim, and seal immediately for lunch.

Notes

Pro tip: shred the cheddar fresh (or buy pre-shredded labeled for melting) so the sauce turns glossy instead of grainy. Store any leftovers in the refrigerator up to 2 days; reheat gently on the stovetop with a splash of milk. Freezing isn’t recommended because cheddar sauce can break when thawed. For a gluten-free swap, use gluten-free elbow macaroni and follow its cook time.
