  • 1 onion Small, diced.
  • 2 clove garlic Minced.

  • 2 tbsp olive oil

  • 1 tsp dried oregano
  • 0.25 fresh dill For garnish.

Method
 

Sauté the aromatics
  1. Heat the olive oil in a Dutch oven over medium heat until shimmering. Add the onion, garlic, and carrots and sauté for 6-8 minutes, stirring often, until softened and fragrant.
Simmer the soup
  1. Add the chickpeas, vegetable broth, and dried oregano to the pot and stir to combine. Bring to a simmer over medium-high heat, then reduce to a gentle simmer for 20 minutes, until the vegetables are tender and the broth looks lightly golden.
Blend and finish
  1. Scoop out about half the soup and blend until smooth, then return it to the pot. Stir until the mixture is evenly creamy but still has some whole chickpeas for texture.
  2. Turn off the heat and stir in the fresh lemon juice right before serving. Taste and adjust seasoning if needed, then keep warm so the citrus stays bright.
  3. Ladle the soup into bowls and top with fresh dill. Finish with a drizzle of olive oil so the surface glistens.

Pro tip: Blend only half the soup for a creamy texture while keeping whole chickpeas for a satisfying bite. Store leftovers in the refrigerator up to 3 days in an airtight container; reheat gently to avoid losing brightness. Freezing is not recommended because lemon flavor can dull after thawing. For a lower-sodium option, use reduced-sodium vegetable broth.
