Method
 

Brew and cool
  1. Brew 2 espresso shots and let cool slightly for about 2 minutes so it can shake without melting the ice too fast.
Shake the espresso
  1. Add the espresso shots, brown sugar syrup, cinnamon, and apple extract to a cocktail shaker with a handful of ice.
  2. Shake vigorously for 15-20 seconds, until the mixture looks frothy and slightly aerated.
Serve over ice
  1. Fill a glass with fresh ice to keep the drink cold.
  2. Strain the shaken espresso mixture over the ice, aiming for an even pour so the foam sits on top.
  3. Top with a splash of oatmilk and stir gently before serving for a layered, creamy finish.

Notes

Pro tip: Shake long enough to build a foamy head, but don’t over-shake once it’s very cold—too much dilution can flatten the flavor. Store any leftover espresso mixture in the fridge up to 24 hours, then shake again briefly with fresh ice; assembled drinks are best fresh. Freezing isn’t recommended because espresso foam and oatmilk texture can break. For a dairy-free option, this recipe already uses oatmilk; if you want lower sweetness, reduce the brown sugar syrup by 1 tbsp and adjust to taste.
