Assemble the cracker stacks
- Arrange the crackers in rows on a plate or in lunchbox compartments.
- Spread a thin layer of cream cheese on half the crackers, if using.
- Top each cracker with a folded piece of ham or a round of cheddar cheese.
- Layer a slice of pepperoni onto some of the stacks for variety.
- Stack a second cracker on top of a few to create double-decker bites.
- Pack into an airtight container or lunchbox and keep chilled until serving.
Notes
Pro tip: Cut the cheddar into rounds using the rim of a small glass so each piece fits the crackers neatly. Refrigerate in a sealed container for up to 2 days; the pepperoni can soften slightly but remains tasty. Freezing isn’t recommended because crackers can lose their crisp texture. For a lower-fat option, use reduced-fat cream cheese and reduced-sodium deli meats where available.
