Ingredients
  

Round buttery crackers
  • 24 round buttery crackers Use crackers that fit easily in lunchbox compartments.
Deli meats and cheese
  • 8 slices deli ham, quartered Quarter each slice so it layers cleanly on crackers.
  • 8 slices cheddar cheese, cut into rounds Cut cheese into rounds sized to the crackers.
  • 8 slices pepperoni Layer onto select stacks for variety.
  • 0.25 cup cream cheese, optional Optional spread for extra creaminess and grip.

Method
 

Assemble the cracker stacks
  1. Arrange the crackers in rows on a plate or in lunchbox compartments.
  2. Spread a thin layer of cream cheese on half the crackers, if using.
  3. Top each cracker with a folded piece of ham or a round of cheddar cheese.
  4. Layer a slice of pepperoni onto some of the stacks for variety.
  5. Stack a second cracker on top of a few to create double-decker bites.
  6. Pack into an airtight container or lunchbox and keep chilled until serving.

Notes

Pro tip: Cut the cheddar into rounds using the rim of a small glass so each piece fits the crackers neatly. Refrigerate in a sealed container for up to 2 days; the pepperoni can soften slightly but remains tasty. Freezing isn’t recommended because crackers can lose their crisp texture. For a lower-fat option, use reduced-fat cream cheese and reduced-sodium deli meats where available.
