Prep the foil packets
- Cut four large squares of heavy-duty foil and lay them flat.
- Place a beef patty on each piece of foil, then top each with cubed potatoes, sliced carrots, and sliced onion.
- Season each packet with garlic powder, paprika, salt, and pepper.
- Top each packet with a pat of butter.
- Fold and seal each packet tightly, leaving a little room for steam.
Cook
- Cook over campfire coals or bake at 400°F for 35-40 minutes until the potatoes are tender.
- Carefully open the packets, watching for hot steam, and serve.
Notes
Pro tip: cut the potatoes and carrots small and uniform so they finish cooking at the same time as the beef. Store leftovers in the refrigerator up to 3 days; reheat gently in the microwave or rewarm in a covered skillet until hot. Freezing is not recommended because the potatoes can soften too much after thawing. For a lower-fat option, use 93% lean ground beef and reduce butter slightly to 2 tbsp per 4 servings.
