ranch seasoning

corn
  • 0.5 cup corn, roasted
jalapeño
  • 0.25 cup pickled jalapeño slices
cilantro
  • 2 tbsp fresh cilantro

lime
  • 1 tbsp lime juice
  • 1 tbsp lime zest For topping and flavor lift.
toppings and dippers
  • 1 crumbled tortilla chips Crunch topping—use crushed chips.
  • 1 tortilla chips For dipping.
  • 1 bell pepper strips For dipping.
  • 1 cucumber rounds For dipping.

Method
 

Blend the base
  1. Blend the cottage cheese until completely smooth, scraping down as needed so there are no lumps. Visual cue: the mixture should look silky and uniform.
  2. Stir in the Greek yogurt, ranch seasoning mix, and lime juice until the dip is thick and evenly colored. Visual cue: streaks of seasoning should disappear.
Add fillings
  1. Fold in the shredded rotisserie chicken, roasted corn, and pickled jalapeño slices until distributed. Visual cue: you should see chicken pieces and yellow corn throughout.
Top and serve
  1. Transfer the dip to a wide serving bowl and top with crumbled tortilla chips, extra cilantro, and lime zest. Visual cue: the chips should sit on top for a crunchy texture.
  2. Serve immediately with tortilla chips, bell pepper strips, and cucumber rounds, or refrigerate up to 2 days. Visual cue: chilled dip firms slightly but stays spreadable.

Notes

Pro tip: crush the tortilla chips right before serving to keep the topping crunchy. Refrigerate in an airtight container up to 2 days; freezing is not recommended since yogurt-based dips can become grainy. For a dietary swap, use lactose-free Greek yogurt and lactose-free cottage cheese to keep the same high-protein texture.
