Prep
- Preheat the oven to 425°F and line a large sheet pan with parchment paper.
- Arrange the chicken thighs, pineapple chunks, bell peppers, and red onion on the sheet pan.
- Whisk together the teriyaki sauce, soy sauce, and honey, then pour evenly over everything.
Roast
- Roast for 25-30 minutes, flipping halfway, until the chicken is cooked through and the edges are caramelized.
- Broil for the last 2-3 minutes for extra caramelization if desired.
Finish
- Garnish with sliced green onions before serving.
Notes
For best caramelization, don’t crowd the pan—spread chicken and pineapple in a single layer with a little space between pieces. Store leftovers in an airtight container in the refrigerator up to 3 days; reheat in a 350°F oven until warm. Freeze is not recommended because pineapple can soften after thawing. For a gluten-aware option, use gluten-free teriyaki sauce and soy sauce.
