Ingredients

ground beef stroganoff casserole
  • 1 lb ground beef
  • 1 small onion, diced
  • 8 oz mushrooms, sliced
  • 2 cup beef broth
  • 1 cup sour cream
  • 1 can (cream of mushroom soup) cream of mushroom soup
  • 12 oz egg noodles, cooked
  • 1 cup shredded mozzarella cheese
  • 1 Fresh parsley, for garnish

Equipment

  • 1 sheet pan

Method

Brown the beef and aromatics
  1. Brown ground beef with diced onion and sliced mushrooms until cooked through, stirring until the meat loses its pink color and browns evenly.
Make the creamy stroganoff sauce
  1. Stir in beef broth, sour cream, and cream of mushroom soup until smooth, mixing until no streaks remain and the gravy turns creamy.
Combine with noodles and bake
  1. Fold in the cooked egg noodles until well coated, stirring just until the noodles are evenly covered.
  2. Spread the mixture into a greased baking dish, smoothing the top so it bakes evenly.
  3. Top with shredded mozzarella cheese, covering the surface completely for a melted, bubbly finish.
  4. Bake at 350°F for 20-25 minutes until bubbly and the cheese is melted.
Serve
  1. Garnish with fresh parsley before serving, adding a fresh green finish right as you plate the casserole.

Notes

Pro tip: use wide egg noodles so they hold the creamy sauce better than thin noodles. Store leftovers in the refrigerator up to 3-4 days in a covered container; reheat in the oven or microwave until steaming hot. Freezing: yes—freeze tightly wrapped portions up to 2 months and thaw overnight before reheating. Dietary swap: use low-fat sour cream or a lactose-free sour cream to reduce fat while keeping the creamy texture.
