4 medium zucchini, sliced

Method
 

Prep and season
  1. Preheat the oven to 450°F and line two baking sheets with foil so everything roasts evenly at high heat.
  2. Toss zucchini slices with olive oil, salt, black pepper, garlic powder, smoked paprika, and 1/4 cup Parmesan cheese until the pieces look evenly coated.
  3. Arrange the zucchini in a single layer on the baking sheets with space between slices for better browning.
  4. Sprinkle the remaining Parmesan cheese over the top to form a crisp layer as it heats.
Roast and broil
  1. Roast at 450°F for 6 to 8 minutes until the zucchini is tender and the cheese starts to set.
  2. Broil for an additional 2 minutes until the cheese is golden brown, watching closely to avoid burning.
Finish
  1. Garnish with fresh parsley and serve immediately for the best texture.

Notes

For the crispiest cheese crust, keep the zucchini in a single layer and don’t crowd the pan. Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat on a sheet pan in a 425°F oven for 3 to 5 minutes. Freezing isn’t recommended due to zucchini texture. For a dairy-light option, use a Parmesan-style hard cheese substitute (or finely grated hard vegan cheese) so the broiled topping still browns.
