Ingredients
  

Greek yogurt base
  • 2 cup plain Greek yogurt Use plain (not flavored) for the best vanilla flavor.
  • 3 tbsp honey Sweeten to taste; warm slightly if honey is very thick.
  • 1 tsp vanilla extract Add after honey for smoother mixing.
Toppings
  • 1 cup mixed berries, chopped Chop into bite-size pieces so they freeze evenly.
  • 0.25 cup granola, crushed Crush lightly so it stays crunchy on the bark.
  • 2 tbsp mini chocolate chips Scatter for chocolate flecks throughout.

Method
 

Prep the tray
  1. Line a sheet pan with parchment paper to prevent sticking and make release easy.
Mix the yogurt layer
  1. Whisk the plain Greek yogurt, honey, and vanilla extract until smooth, with no streaks remaining.
Spread into a thin layer
  1. Spread the yogurt mixture evenly on the parchment in a thin layer so the bark freezes solid in one piece.
Add fruit and crunch
  1. Scatter the chopped mixed berries, crushed granola, and mini chocolate chips over the top, pressing gently so toppings adhere.
Freeze
  1. Freeze for at least 3 hours, or until completely solid.
Break and serve
  1. Break into jagged pieces and serve immediately, or store in the freezer.

Notes

Pro tip: Break into shards while the bark is still very cold so the toppings stay crunchy and don’t slide off. Store covered in the freezer for up to 2 weeks; freezer yes—freeze as a whole bark and only portion when ready to eat. For a dairy-free swap, replace Greek yogurt with thick coconut or almond-based yogurt (check that it’s plain and works as a substitute for baking/freezing).
