Thin sliced roast beef
  • 1.5 lb thin sliced roast beef Layer evenly over the rolls.
Provolone cheese
  • 12 count provolone cheese Use slices; layer between beef and rolls.
Unsalted butter
  • 0.5 cup unsalted butter Melted for the topping glaze.
Worcestershire sauce
  • 1 tbsp Worcestershire sauce Stir into melted butter for savory flavor.
Garlic
  • 2 clove garlic Minced.
Dried onion flakes
  • 1 tsp dried onion flakes Mix into the butter glaze.
Beef broth
  • 2 cup beef broth Warmed for dipping/au jus style serving.

Equipment

  • 1 sheet pan

Method

Build the squares
  1. Place the bottom half of the rolls in a greased baking dish as a single layer.
  2. Layer the thin sliced roast beef evenly over the rolls, covering the surface.
  3. Add the provolone cheese slices over the roast beef in an even layer.
  4. Top with the other half of the rolls to finish the sandwich stack.
Make the butter glaze and bake
  1. Whisk the melted butter with Worcestershire sauce, minced garlic, and dried onion flakes until combined.
  2. Brush the glaze generously over the tops of the rolls so the crust will toast evenly.
  3. Cover with foil and bake at 350°F for 15 minutes, until the rolls begin to soften.
  4. Uncover and bake at 350°F for 5 more minutes until the top is golden and the cheese is melted and bubbling.
Slice and serve
  1. Slice the baked stack into squares.
  2. Serve with warm beef broth for dipping, reheating right before serving to keep it hot.

Notes

Pro tip: Warm the beef broth on the stovetop right before serving so the au jus stays hot. Store leftover French dip squares covered in the refrigerator up to 3 days; reheat in a 350°F oven until warmed through. Freezing is not recommended for best texture of the rolls. For a dairy-free swap, use a provolone-style dairy-free melting cheese and follow the same layering and bake time.
