  • 2 mangoes Dice when ripe and slightly soft to the touch for the best texture.
Aromatics
  • 0.5 red onion Finely dice so it blends evenly.
  • 1 jalapeño Seed and mince for a controlled heat level.
  • 0.25 cup cilantro Chop for a fresh, herb-forward finish.
Seasoning
  • 2 tbsp lime juice Use fresh lime juice for the brightest tang.
  • 1 Salt Season to taste at the end.

Method
 

Mix the salsa base
  1. Combine the diced mango, red onion, and minced jalapeño in a bowl; press the mixture lightly so the onion starts to mingle, and keep it visually spread out with an even color.
  2. Stir in the chopped cilantro, distributing it throughout so you see green flecks across the golden mango.
  3. Drizzle the lime juice over the mixture and toss to combine until the mango looks glossy and lightly coated.
  4. Season with salt to taste, stirring once more so the seasoning disappears evenly.
Rest and serve
  1. Let the salsa rest for 10 minutes so the flavors meld, watching the juices pool slightly at the bottom for a juicier texture.

Notes

Pro tip: choose mangoes that give slightly when pressed for sweeter dice that stay tender. Store covered in the refrigerator for up to 3 days; the salsa may release more juice as it sits, but it stays great. Freezing isn’t recommended because the mango texture softens too much. For a lower-sodium option, use a reduced-salt seasoning instead of adding extra salt at the end.
