Bake the cookies
- Preheat the oven to 350°F, then set a sheet pan aside for baking.
- Cream butter and granulated sugar until fluffy, then beat in the egg, key lime zest, and key lime juice.
- Mix in flour and baking soda until just combined, stopping as soon as no dry streaks remain.
- Scoop dough onto the sheet pan, spacing slightly, then bake for 10–12 minutes until the edges are just set and the centers look soft.
Make and add the glaze
- Whisk powdered sugar with key lime juice for the glaze until smooth and pourable with a glossy look.
- Let the cookies cool completely, then drizzle the glaze over the cookies so it lands in streaks and pools lightly.
- Let the glaze set before serving, waiting until it looks matte and no longer looks wet on top.
Notes
For the cleanest citrus flavor, zest before juicing so you get maximum zest from the fruit. Cool the cookies all the way before glazing so the glaze doesn’t melt into the surface. Store airtight at room temperature for 3 days, refrigerate up to 5 days, and freeze baked (glaze after thawing for best texture). For a dairy-free swap, use a 1:1 plant-based butter substitute in place of butter, softened.
