Ingredients
  

Peach filling
  • 6 cup peaches, sliced (fresh or canned)
  • 0.5 cup sugar
  • 1 tsp cinnamon
Cake mix topping
  • 1 yellow cake mix Use 1 box yellow cake mix.
  • 0.5 cup butter, sliced into pats
  • 0.25 cup brown sugar

Method
 

Prep and assemble
  1. Grease the inside of a dutch oven so the cobbler releases easily after baking.
  2. Toss the sliced peaches with sugar and cinnamon, then spread evenly in the bottom of the dutch oven.
  3. Sprinkle the dry cake mix evenly over the peaches without stirring.
  4. Dot the top with pats of butter and sprinkle with brown sugar.
Campfire bake
  1. Cover the dutch oven with its lid and place it over campfire coals with a few coals on top for even heat.
  2. Cook for 35-40 minutes, checking occasionally, until the top is golden and bubbly.
  3. Let cool slightly before serving warm so the filling thickens.

Notes

For even browning, rotate the dutch oven occasionally over the coals during the 35-40 minute bake. Fridge: store covered up to 3 days and rewarm until hot. Freezer: freeze in portions up to 2 months; thaw overnight in the fridge. Dietary swap: use a gluten-free yellow cake mix for a gluten-free version.
