Sauté aromatics

Brown the chicken

- Add the baby spinach and grated Parmesan, stirring until the spinach wilts and the soup turns creamy with a slight tomato-flecked look.
Season and serve
- Season with salt and pepper to taste before serving, tasting at the end for balance and warmth.

Pro tip: drain oil-packed sun-dried tomatoes before chopping so the soup isn’t overly oily, and add the gnocchi directly—no pre-boiling needed. Refrigerate leftovers in an airtight container up to 3 days; reheat gently and thin with a splash of extra broth if it thickens. Freezing: not recommended because cream-based texture can change after thawing. Dietary swap: for a lighter version, use half-and-half instead of heavy cream (texture may be slightly less rich).
