  • 4 cup corn kernels, fresh or frozen Use frozen corn straight from the freezer—no thawing.
  • 8 oz cream cheese, softened
  • 0.5 cup sour cream
  • 1 cup shredded cheddar cheese, divided Reserve half for topping.
  • 6 slice bacon, cooked and crumbled
  • 1 jalapeño, seeded and diced
  • 0.5 tsp garlic powder
  • 0.25 cup chopped green onion For garnish before serving.

Method
 

Mix the dip
  1. Combine corn kernels, softened cream cheese, sour cream, half of the shredded cheddar, crumbled bacon, diced jalapeño, and garlic powder in one bowl and stir until evenly mixed; look for a uniform creamy base with visible corn and bacon flecks.
  2. Spread the mixture into a greased baking dish and smooth the top so it bakes evenly; the surface should look level with small corn dots throughout.
  3. Top with the remaining shredded cheddar cheese and distribute it to cover the surface; you should see a thick, even cheese layer.
Bake
  1. Bake at 375°F for 20-25 minutes until bubbly and golden; the edges should be set and the center should be actively bubbling.
Serve
  1. Garnish with chopped green onion before serving; add it right after baking so it stays fresh and bright.

Notes

Pro tip: Use frozen corn straight from the freezer without thawing so your dip stays thick and cooks up quickly. Refrigerate leftovers in a sealed container for up to 3 days; reheat in the oven or microwave until hot and bubbly. Freezing is not recommended due to texture changes in the dairy. For a dairy-reduced swap, use reduced-fat cream cheese and sour cream to lower calories while keeping the creamy consistency.
