Ingredients
  

Ground beef mixture
  • 2 lb ground beef
  • 0.75 cup breadcrumbs
  • 2 eggs
  • 0.25 cup milk
  • 1 onion, finely diced
  • 1 tsp garlic powder
  • 0.25 Salt and pepper, to taste
Glaze
  • 0.5 cup ketchup
  • 3 tbsp brown sugar
  • 1 tbsp apple cider vinegar

Method
 

Preheat and prep
  1. Preheat oven to 375°F and place a baking dish or sheet pan in the oven as it heats so the loaf cooks evenly.
  2. Mix ground beef, breadcrumbs, eggs, milk, onion, garlic powder, salt, and pepper until just combined and evenly moistened.
Shape and glaze
  1. Shape the mixture into a loaf in a baking dish, compressing gently so it holds together.
  2. Whisk ketchup, brown sugar, and apple cider vinegar until smooth, then spread the glaze evenly over the top.
Bake
  1. Bake for 55–60 minutes at 375°F until the internal temperature reaches 160°F and the glaze looks glossy at the edges.
Rest and serve
  1. Rest the meatloaf for 10 minutes before slicing to let juices redistribute and keep slices tidy.

Notes

For the best sticky finish, let the glaze bake until it caramelizes at the edges and bubbles slightly. Store leftovers covered in the refrigerator up to 3–4 days; freeze slices up to 2 months. For a lighter option, swap half of the ground beef for ground turkey (use the same bake temperature and check for 160°F).
