Cilantro Lime Noodles

Cilantro lime noodles are a quick toss of noodles with a bright citrus soy-garlic dressing that clings to every strand. In about 15 minutes, fresh cilantro and green onions bring a clean herbal finish with a limey punch.

Ingredients
  

Noodles and dressing
  • 1 spaghetti or rice noodles Use 8 oz total.
  • 3 tbsp fresh lime juice
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 2 garlic, minced Minced from cloves.
  • 1 cup fresh cilantro, chopped
  • 2 green onions, sliced
  • 1 tsp honey
  • 0.25 tsp red pepper flakes, to taste Add more or less to heat preference.

Method
 

Cook and dress
  1. Cook the noodles according to package directions, then drain and set aside.
  2. Whisk together the fresh lime juice, soy sauce, sesame oil, olive oil, minced garlic, and honey until smooth in a small bowl.
  3. Pour the dressing over the warm noodles and toss to coat evenly so the sauce clings to the strands.
  4. Fold in the chopped cilantro and sliced green onions, stirring just until evenly distributed.
  5. Sprinkle with red pepper flakes to taste and serve warm or at room temperature.

Notes

For best flavor, toss the noodles right after draining so the sauce emulsifies and clings. Refrigerate leftovers in a sealed container up to 3 days; rewarm gently or serve chilled. Freezing isn’t recommended as herbs lose texture. If you want a gluten-free swap, use tamari instead of soy sauce.
