Make the banana-peanut butter sandwiches
  1. Slice the bananas into rounds about 1/2-inch thick. Aim for even thickness so the frozen bites sandwich uniformly.
  2. Spread a small dollop of peanut butter onto one banana round and sandwich with a second round. Press lightly to help them stick together.
  3. Repeat with remaining banana rounds and peanut butter. Arrange the sandwiches for freezing on a surface ready to transfer.
  4. Freeze the sandwiches for 30 minutes until firm. This helps them hold shape before dipping.
Melt chocolate and dip
  1. Melt the chocolate chips and coconut oil together in the microwave using 20-second bursts, stirring between each burst, until smooth. Stop when glossy and fully melted.
  2. Dip each frozen banana sandwich into the melted chocolate, coating evenly, and let excess drip off. Work quickly so the chocolate starts setting on contact.
  3. Place the coated bites on a parchment-lined tray. Leave a little space between pieces for faster setting.
  4. Freeze for another 30 minutes until the chocolate sets firm before serving. The shell should look matte and hold without smearing.
