Prep and first bake
- Preheat the oven to 400°F and grease a baking dish.
- Season the chicken breasts with olive oil, Italian seasoning, salt, and pepper, then arrange them in the baking dish.
- Bake at 400°F for 20 minutes, until the chicken is nearly cooked through (it should still finish in the next bake).
Add tomatoes and mozzarella
- Remove the casserole from the oven and top each chicken breast with sliced Roma tomatoes and sliced fresh mozzarella.
- Return to the oven and bake at 400°F for another 10-12 minutes, until the cheese is melted and the chicken reaches 165°F.
- Sprinkle the top with fresh chopped basil right after baking.
- Drizzle with balsamic glaze before serving for a glossy finish.
Notes
Pro tip: pound chicken breasts to an even thickness so they cook through at the same rate. For best results, add the tomatoes and mozzarella partway through baking so the cheese melts without overcooking. Store leftovers in the refrigerator up to 3 days; reheat covered in a 350°F oven until warmed through. Freezing is not recommended due to texture changes in the mozzarella. Dietary swap: use low-fat mozzarella if you want a lighter casserole while keeping the caprese-style melt.
