Campfire banana boats with unpeeled bananas split lengthwise and stuffed with chocolate chips and mini marshmallows. Wrapped in foil and cooked over campfire coals until the filling turns gooey and golden.

Ingredients
  

Bananas
  • 6 ripe bananas, unpeeled Keep peel on; cook in peel for best shape and less mess.
Chocolate & marshmallow filling
  • 1 cup mini chocolate chips Stuff directly into the banana pockets.
  • 1 cup mini marshmallows Use mini marshmallows so they melt quickly and evenly.
Topping
  • 1 Graham cracker crumbs, for topping Optional but recommended for crunch and sweetness contrast.

Method
 

Prep the bananas
  1. Slice each banana lengthwise through the peel without cutting all the way through, creating a pocket.
  2. Gently pry open the pocket and stuff with mini chocolate chips and mini marshmallows.
Wrap and cook
  1. Wrap each stuffed banana tightly in a square of foil.
  2. Place the wrapped bananas over campfire coals or on a grill for 8-10 minutes until melted and gooey, with foil still tightly sealed around the fruit.
Serve
  1. Carefully unwrap, watching for hot steam.
  2. Sprinkle with graham cracker crumbs before serving with a spoon, letting the topping cling to the warm, melted filling.

Notes

Pro tip: choose bananas that are ripe but still firm so they hold their shape while cooking. Refrigerate leftovers in a sealed container up to 2 days, then reheat briefly until warm (microwave 15-20 seconds per boat). Freezing is not recommended because the banana texture softens. For a peanut flavor variation, swap in peanut butter chips in place of some of the chocolate chips.
