Cherry tomatoes
  • 3 cup cherry tomatoes Use ripe cherry tomatoes for fast blistering and bursting.
Olive oil

Garlic

Red pepper flakes

Salt

Baguette
  • 1 baguette Sliced for toasting and broiling.
Fresh basil

Method
 

Sauté the garlic
  1. Heat 2 tbsp olive oil in a skillet over medium heat and sauté the minced garlic for 1 to 2 minutes, stirring, until fragrant (no browning).
Burst the tomatoes
  1. Add cherry tomatoes and red pepper flakes, season with salt, and toss to coat until glossy and evenly coated.
  2. Cover and cook over medium heat until the tomatoes burst and soften, about 10 to 12 minutes, shaking the pan once or twice if needed.
  3. Remove the lid and gently press any whole tomatoes to release their juices, cooking 1 to 2 minutes more until the mixture thickens slightly.
Broil the baguette
  1. Brush baguette slices with olive oil and broil until golden and charred on both sides, about 1 to 3 minutes per side, flipping once for even browning.
Assemble and serve
  1. Top the toasted bread with the burst tomatoes and garnish with torn basil before serving.

Notes

Pro tip: choose a heavy skillet so the tomatoes blister faster; if your tomatoes seem watery, simmer uncovered for 1 to 2 extra minutes to thicken. Store covered in the fridge up to 2 days; rewarm gently on the stovetop, then toast fresh bread. Freezing isn’t recommended because the burst-tomato texture softens after thawing. For a gluten-free option, swap the baguette for toasted gluten-free bread slices.
