Ingredients

butter, browned and cooled
  • 1 cup butter Brown until golden and nutty-smelling; cool slightly before mixing.
pumpkin puree
  • 1 cup pumpkin puree
maple syrup
  • 0.5 cup maple syrup Use real maple syrup for best flavor.
brown sugar
  • 1 cup brown sugar
egg yolk
  • 1 egg yolk Use 1 large egg yolk.
all-purpose flour
  • 2.5 cup all-purpose flour
baking soda
  • 1 tsp baking soda
pumpkin pie spice
  • 2 tsp pumpkin pie spice
salt
  • 0.5 tsp salt

Equipment

  • 1 sheet pan
  • 1 Dutch oven

Method

Brown the butter
  1. Brown the butter in a saucepan over medium heat until golden and nutty-smelling, then cool slightly. You should see browned milk solids stuck to the bottom and hear gentle crackling as it browns.
Mix wet ingredients
  1. Whisk the browned butter, pumpkin puree, maple syrup, brown sugar, and egg yolk together until smooth and glossy. The mixture should look evenly blended with no streaks of brown sugar.
Mix dry ingredients
  1. Whisk the all-purpose flour, baking soda, pumpkin pie spice, and salt together. Stop once the spices are evenly distributed throughout the flour.
Combine and chill
  1. Fold the dry ingredients into the wet mixture until a soft dough forms. The dough should be thick and slightly sticky rather than stiff.
  2. Chill the dough for 30 minutes. It should firm up so the scoops hold their shape.
  3. Scoop the chilled dough onto a lined baking sheet, spacing the portions apart. Look for mounds with rounded tops that won’t spread too far.
Bake
  1. Bake at 350°F for 11 to 13 minutes, until the edges are set but the centers remain soft. The cookies should look slightly underdone in the middle while the rims are set and lightly darker.

Notes

Chilling is essential here since browned butter makes the dough softer than usual; if your dough still feels loose, chill up to 15 minutes longer. Store baked cookies in an airtight container at room temperature for up to 3 days, or refrigerate for up to 5 days. Freezing is yes—freeze baked cookies for up to 2 months and thaw at room temperature. For a dairy-free option, use a 1:1 plant butter intended for baking that browns (flavor varies).
