Ingredients

Cooked white rice
  • 3 cup cooked white rice
Broccoli florets
  • 3 cup broccoli florets Steam until bright green so they don’t turn mushy during baking.
Cream of mushroom soup
  • 1 can (10.5 oz) cream of mushroom soup
Sour cream
  • 1 cup sour cream
Shredded cheddar cheese
  • 2 cup shredded cheddar cheese Use 1 cup mixed in and 1 cup for topping.
Milk
  • 0.5 cup milk
Garlic powder
  • 0.5 tsp garlic powder
Salt
  • 0.25 tsp salt To taste.
Black pepper
  • 0.25 tsp black pepper To taste.

Equipment

  • 1 sheet pan

Method

Combine the casserole mixture
  1. Preheat the oven to 350°F and grease a baking dish. In a large bowl, mix the cooked white rice, steamed broccoli, cream of mushroom soup, sour cream, milk, garlic powder, salt, and black pepper until evenly combined.
  2. Fold in 1 cup of the shredded cheddar cheese so it disperses through the rice and broccoli.
Bake
  1. Spread the mixture into the greased baking dish in an even layer. Sprinkle the remaining shredded cheddar cheese evenly over the top.
  2. Bake at 350°F for 25-30 minutes, until bubbly and golden on the surface. Let it stand 5 minutes before serving so it sets slightly.

Notes

Pro tip: steam the broccoli just until bright green, then cool briefly—this helps it stay tender instead of turning soft in the oven. Refrigerate leftovers in a sealed container for up to 3 days; reheat in the oven or microwave until warm. Freezing is not recommended because the dairy can separate after thawing. For a lighter option, use low-fat sour cream and reduced-fat cheddar while keeping the bake time the same.
