  • 3 very ripe bananas Mashed until mostly smooth.
Fat and sweetener
  • 0.3333333333 cup coconut oil Melted and cooled slightly.
  • 0.75 cup brown sugar
Wet ingredients
  • 1 large egg
  • 1 tsp vanilla
Leavening and flavor
  • 1 tsp baking soda
  • 0.25 salt Pinch.
  • 1 tsp cinnamon
Dry ingredients
  • 1.5 cup all-purpose flour
Add-ins
  • 0.5 cup toasted pecans Roughly chopped.
  • 0.5 cup toffee bits
Optional glaze
  • 1 tbsp maple syrup glaze Brushed on hot loaf immediately from the oven.

Method
 

Prep and bake
  1. Preheat oven to 350°F and grease a 9x5 loaf pan.
  2. Mash the very ripe bananas, then stir in melted coconut oil, brown sugar, large egg, and vanilla until smooth.
  3. Stir in baking soda, salt, and cinnamon, then fold in all-purpose flour until just combined with no dry streaks.
  4. Fold in toasted pecans and toffee bits, distributing them through the batter.
  5. Pour the batter into the loaf pan and bake for 55–65 minutes until a toothpick is clean.
Glaze and finish
  1. Brush maple syrup glaze over the hot loaf immediately from the oven so it soaks in as it sets.

Notes

For the best texture, mix the flour in only until the batter loses dry spots—overmixing can make the loaf dense. Cool the loaf in the pan for about 10 minutes before slicing. Store covered at room temperature up to 3 days or refrigerate up to 5 days; freeze slices up to 2 months (glaze after thawing if you want the freshest sheen). For a dairy-free option, keep as written since this recipe already uses coconut oil and no dairy; for nut-free, replace pecans with toasted sunflower seeds or omit.
