Method
Melt the white chocolate
- Melt the white chocolate chips in the microwave using 30-second bursts, stirring between each burst until smooth and pourable.
- Stir in 1 tsp cinnamon and the vanilla extract until fully combined and glossy.
Coat the cereal
- Pour the melted cinnamon white chocolate over the rice cereal squares in a large bowl and toss gently until the cereal pieces are coated.
- Fold in the crushed freeze-dried apple pieces so they’re evenly distributed.
Dust with cinnamon sugar
- Transfer the coated cereal to a large bag with the cinnamon sugar mixture (powdered sugar mixed with cinnamon).
- Shake the bag until every piece is fully coated in the cinnamon sugar dusting.
Notes
Crush the freeze-dried apple pieces gently by hand to keep some texture instead of turning everything to powder. Store in an airtight container at room temperature for up to 3 days; it’s best kept dry. Freezing isn’t recommended because the cereal can lose its crisp bite. For a dairy-free swap, use dairy-free white chocolate chips (measure the same amount) so the coating still melts smoothly.
