Ingredients
  

Cold brew coffee
  • 2 cup cold brew coffee Use cold brew that’s already brewed and chilled.
Cold foam
  • 0.5 cup heavy cream Whip until thickened and frothy, soft peaks for floating.
  • 2 tbsp brown sugar syrup
  • 0.25 tsp apple extract
  • 0.5 tsp cinnamon Use 1/2 tsp total; reserve some for topping as directed.
Cinnamon sugar topping
  • 1 tbsp granulated sugar
  • 1 tbsp cinnamon Combine with granulated sugar for the topping.
To serve
  • 1 Ice Fill the glass before adding cold brew.

Method
 

Make the cinnamon sugar topping
  1. Mix 1 tablespoon cinnamon with 1 tablespoon granulated sugar in a small bowl until evenly combined for a topping.
Whip the apple cinnamon cold foam
  1. Whisk or blend heavy cream, brown sugar syrup, apple extract, and the remaining cinnamon together until thickened and frothy, about 2 minutes, until it holds soft peaks.
Assemble the drink
  1. Fill a glass with ice.
Add the cold brew
  1. Pour cold brew coffee over the ice, filling about three-quarters of the glass.
Top with cold foam
  1. Spoon the whipped apple cinnamon cold foam over the top so it floats.
Finish and serve
  1. Sprinkle the cinnamon sugar topping over the foam right before serving.

Notes

Pro tip: whip only to soft peaks so the foam floats instead of collapsing into the coffee. Store leftover foam in the fridge up to 24 hours (best texture within 12); assemble fresh for best results. Freezing is not recommended. If you want a lighter option, use half-and-half or a lighter cream substitute, but the foam may be less thick and float less reliably.
