white miso paste
  • 3 tbsp white miso paste
lemon juice
  • 2 tbsp lemon juice
turmeric
  • 1 tsp turmeric
green onions
  • 2 green onions sliced

Simmer the aromatics
  1. In a Dutch oven, combine the vegetable broth, fresh ginger, garlic, and turmeric, then bring to a gentle simmer (about 180°F/82°C). The broth should start steaming evenly without a hard boil.
  2. Maintain a gentle simmer for 15 minutes to infuse the flavors. Keep the surface lightly active with small bubbles around the edges.
Finish with miso and lemon
  1. Remove the pot from the heat, then strain out the ginger and garlic if desired. The liquid should look golden and fragrant.
  2. In a small bowl, whisk a ladleful of warm broth into the white miso paste until smooth, then pour it back into the pot. The mixture should turn evenly smooth with no miso lumps.
  3. Stir in the lemon juice, keeping the broth below a simmer. You should see the broth brighten as the lemon disperses.
Serve

Pro tip: never boil the broth after adding the miso—high heat can dull flavor and reduce beneficial cultures; aim for warm, steamy heat only. Refrigerate in a covered container up to 3 days and rewarm gently (do not vigorously boil). Freezing is not recommended because miso can change texture after thawing. For a gluten-free option, choose gluten-free white miso paste and confirm your broth is gluten-free.
