  • 1.5 lb ground beef
  • 3 cooked rice
  • 3 tbsp gochujang
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame oil
  • 3 garlic, minced
  • 1 tsp ginger, grated
  • 2 scallions, sliced
  • 1 tsp sesame seeds

Method
 

Cook the beef
  1. Brown ground beef in a large cast iron skillet over medium-high heat, breaking it into crumbles until browned, about 8–10 minutes, and stir frequently so the bits stay in contact with the pan.
  2. Add garlic and ginger, cooking 1 minute until fragrant, and keep the heat at medium-high so the aroma releases quickly without burning.
  3. Whisk gochujang, soy sauce, brown sugar, and sesame oil; pour the mixture over the beef, then stir until evenly coated, and the sauce should look dark and sticky as it starts to heat.
  4. Simmer 3–4 minutes until glossy and slightly thickened, stirring occasionally, until the glaze clings to the beef.
Serve
  1. Serve the glossy beef over cooked rice so the sauce coats the top layer and you can see the red-brown glaze against the white rice.
  2. Top with scallions and sesame seeds, finishing with a fresh green and nutty sprinkle that sits on top rather than mixing in.

Notes

Pro tip: adjust gochujang to taste before simmering the full time—start with 2 tbsp if you want milder heat, then add up to 1 tbsp more as needed. Store leftovers in an airtight container in the fridge for up to 3 days; reheat in a skillet with a splash of water until hot. Freezing is not recommended for best texture of the beef and sauce. For a lighter option, swap half the ground beef for lean ground turkey.
